Ingredients:
- 1 lb ground beef or ground turkey
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can 10 oz red enchilada sauce
- 1 can 14 oz refried beans
- 1 cup shredded cheddar cheese
- 8 small flour tortillas
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
In a large skillet, cook the ground beef or ground turkey over medium-high heat until browned
Drain any excess fat
Add the chopped onion and minced garlic to the skillet
Cook for an additional 2-3 minutes until the onion is soft and translucent
Stir in the red enchilada sauce and refried beans
Season with salt and pepper to taste
Cook for 5-7 minutes, stirring occasionally, until the mixture is heated through
In a separate skillet, heat about 1/4 inch of vegetable oil over medium-high heat
Fry each tortilla for about 10 seconds on each side until they are pliable
Drain on paper towels
Preheat your oven to 350F 175C
Spoon a portion of the beef or turkey mixture onto each tortilla and roll it up
Place the rolled enchiritos seam-side down in a baking dish
Sprinkle the shredded cheddar cheese over the top of the enchiritos
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly
Serve the enchiritos hot, garnished with sour cream and chopped cilantro
