Ingredients:
- 1 1/2 cups almond flour
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated erythritol sweetener
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsweetened almond milk
Instructions:
Turn on the oven and heat it up to 325F 160C
Butter or line a loaf pan with parchment paper
Make the butter and erythritol sweetener light and fluffy in a mixing bowl by beating them together
One egg at a time, making sure to mix well after each addition
Add the vanilla extract and mix well
Add the almond flour, baking powder, and salt to a different bowl and mix them together using a whisk
Gradually add the dry ingredients to the wet ones, mixing in the almond milk as you go
Do this until everything is well mixed
When the loaf pan is ready, pour the batter into it and spread it out evenly
After the oven is hot, bake it for 45 to 50 minutes, or until a toothpick stuck in the middle comes out clean
For 10 minutes, let the pound cake cool in the pan
Then, move it to a wire rack to cool completely
Cut and serve
