Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1/2 cup semi-sweet chocolate chips
- 1/2 tsp peppermint extract
- Green food coloring optional
- Mint chocolate chips for decoration optional
Instructions:
Preheat your oven to 350F 175C
Line a cupcake tin with cupcake liners
In a medium-sized bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt
Set aside
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs one at a time, beating well after each addition
Stir in the vanilla extract and peppermint extract
Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with the dry ingredients
Mix until just combined
If desired, add a few drops of green food coloring and mix until the batter is evenly tinted
Fold in the semi-sweet chocolate chips
Fill each cupcake liner about 2/3 full with batter
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely
Once the cupcakes are completely cooled, you can optionally decorate them with mint chocolate chips and additional frosting or icing of your choice
