Ingredients:
- 4 large potatoes
- 1/2 cup sour cream
- 1/4 cup butter
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Chopped chives for garnish
Instructions:
Preheat the oven to 375F 190C
Wash and scrub the potatoes, then pierce them with a fork a few times
Bake the potatoes directly on the oven rack for about 45-60 minutes, until tender
Remove the potatoes from the oven and let them cool slightly
Cut the potatoes in half lengthwise and scoop out the flesh into a large mixing bowl, leaving a thin layer of potato on the skin to create potato shells
Mash the potato flesh in the bowl with sour cream, butter, milk, and half of the shredded cheddar cheese
Season with salt and pepper to taste
Evenly spoon the mashed potato mixture back into the potato shells
Sprinkle the remaining shredded cheddar cheese on top of each potato
Return the potatoes to the oven and bake for another 15-20 minutes, or until the cheese is melted and bubbly
Garnish with chopped chives before serving
