Fluffy Belgian Pancakes

These fluffy pancakes made in the Belgian style are a tasty change from regular pancakes. Theyre airy and light, and theyre great for a special treat at breakfast or brunch.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 1/2 cups buttermilk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • Optional toppings: fresh berries, maple syrup, whipped cream

Instructions:

In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt

In another bowl, beat the eggs and then add buttermilk, melted butter, and vanilla extract

Mix well

Pour the wet ingredients into the dry ingredients and stir until just combined

Do not overmix; its okay if there are some lumps

Preheat a non-stick griddle or skillet over medium-high heat and lightly grease it with cooking spray or butter

Pour 1/4 cup portions of batter onto the hot griddle for each pancake

Cook until bubbles form on the surface, then flip and cook the other side until golden brown

Serve the pancakes hot with your choice of toppings such as fresh berries, maple syrup, or whipped cream
