A tropical twist on a classic potato salad, this Hawaiian Macaroni Potato Salad combines macaroni, potatoes, pineapple, and ham with a creamy dressing. Its a perfect side dish for your next luau or barbecue
Ingredients:
- 2 cups macaroni pasta
- 2 cups diced potatoes
- 1 cup mayonnaise
- 1/4 cup milk
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/2 cup diced onion
- 1/2 cup diced pineapple chunks
- 1/2 cup diced ham
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
Cook macaroni pasta and diced potatoes separately until tender
Drain and let cool
In a large mixing bowl, whisk together mayonnaise, milk, apple cider vinegar, and Dijon mustard
Add cooked macaroni, potatoes, diced red bell pepper, diced green bell pepper, diced onion, diced pineapple chunks, and diced ham to the bowl
Gently toss everything together until well combined
