Ingredients:
- 3 medium potatoes, diced
- 2 leeks, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Preheat oven to 400F 200C
In a large bowl, toss diced potatoes and sliced leeks with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated
Spread the seasoned potatoes and leeks onto a baking sheet lined with parchment paper
Roast in the preheated oven for 25-30 minutes, or until potatoes are tender and golden brown, stirring halfway through
Once roasted, remove from the oven and garnish with fresh parsley before serving
