Leek & Potato Pan Roast

A flavorful and hearty dish featuring roasted potatoes and leeks, seasoned with smoky paprika and garlic powder. This vegan and paleo-friendly recipe is perfect as a side or main dish for any occasion.

Ingredients:

  • 3 medium potatoes, diced
  • 2 leeks, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

Preheat oven to 400F 200C

In a large bowl, toss diced potatoes and sliced leeks with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated

Spread the seasoned potatoes and leeks onto a baking sheet lined with parchment paper

Roast in the preheated oven for 25-30 minutes, or until potatoes are tender and golden brown, stirring halfway through

Once roasted, remove from the oven and garnish with fresh parsley before serving
