Ingredients:
- 4 large portabello mushroom caps
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 burger buns
- 1 cup baby spinach leaves
- 1 large tomato, sliced
- 1 red onion, thinly sliced
- 4 slices of Swiss cheese
- 1 avocado
- 1/4 cup Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper optional
Instructions:
Preheat your grill to medium-high heat
Clean the portabello mushroom caps and remove the stems
Brush both sides of the mushroom caps with olive oil and season with salt and pepper
Grill the mushroom caps for about 4-5 minutes per side, or until they are tender and have grill marks
While the mushrooms are grilling, split the burger buns and toast them on the grill until lightly browned
In a bowl, mash the avocado and mix it with Greek yogurt, minced garlic, lemon juice, cumin, paprika, and cayenne pepper if desired
Once the mushroom caps are done, place a slice of Swiss cheese on each cap and allow it to melt slightly
To assemble the burgers, spread a generous amount of creamy avocado sauce on the bottom half of each bun
Place a grilled mushroom cap with melted cheese on top of the sauce
Add baby spinach leaves, tomato slices, and red onion slices on top of the mushroom cap
Finish by placing the top half of the bun on the ingredients to create the burger
