Ingredients:
- 4 large bell peppers
- 1 cup cooked rice
- 1 can 15 oz black beans, drained and rinsed
- 1 cup salsa
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions:
Cut the tops off the bell peppers and remove seeds and membranes
In a bowl, mix together cooked rice, black beans, salsa, shredded cheese, cumin, chili powder, salt, and pepper
Stuff each bell pepper with the rice and bean mixture
