Ingredients:
- 1 cup basmati rice
- 6 cups whole milk
- 1/2 cup sugar
- 1/4 cup chopped nuts almonds, cashews, pistachios
- 1/4 teaspoon cardamom powder
- Saffron strands optional
- 2 tablespoons ghee clarified butter
- 1 tablespoon raisins
Instructions:
Run water over the basmati rice several times to clean it well
Wash the rice and put it in the Instant Pot
Add the whole milk, sugar, chopped nuts, cardamom powder, and saffron strands if you are using them
Mix well
Position the valve so that it seals, then close the Instant Pot lid
Put the food through 20 minutes of high pressure
After you are done, let the pressure drop naturally for 10 minutes
Then, carefully do a quick pressure release
Take off the lid and mix the kheer well
Warm up the ghee in a small pan and fry the raisins until they get puffy
Add this to the kheer and mix it in slowly
You can serve it warm or cold, and if you want, you can add more nuts on top
