Ingredients:
- 2 cups broccoli florets
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 can 15 oz chickpeas, drained and rinsed
- 2 cloves garlic, minced
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons water
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions:
Get the oven ready by heating it up to 400F 200C
Place broccoli florets on a baking sheet and season with salt and pepper
Brush with olive oil
Roast in an oven that has been heated up for 20 to 25 minutes, or until soft and slightly crispy
Get the cheddar hummus ready while the broccoli is roasting
Put the chickpeas, garlic, tahini, lemon juice, water, extra virgin olive oil, cheddar cheese shreds, salt, and pepper in a food processor
To make it smooth and creamy, scrape down the sides of the bowl as needed
Let the broccoli cool down a bit after its been roasted
You can dip the roasted broccoli in the cheddar hummus that you serve with it
